Pumpkin Oatmeal Cookies with Maple Brown Butter Icing (gluten free)

These Gluten Free Pumpkin Oatmeal Cookies are topped with Brown Butter Maple Icing to make them perfect for the holidays.

Cookie Ingredients
2 cups gluten free flour (I used Bob’s Red Mill 1 to 1 blend)
1 ½ tsp baking soda
2 tsp cinnamon
½ tsp ginger
½ tsp nutmeg
2 cups gluten free rolled oats (I used Bobs Red Mill old fashion oats)
1 cup butter, (2 sticks well softened)
1 ½ cups brown sugar, firmly packed
2 eggs
1 cup pumpkin puree
1 tsp vanilla

Glaze Ingredients
4 tbsp. butter
¼ cup pure maple syrup
1 cup confectioner’s sugar
