These Peach Cobbler Crumb Bars are the perfect summer dessert. They can be served in larger squares with some vanilla ice cream or as smaller sized bars more reminiscent of a cookie bar.

Ingredients for the Filling:
2 eggs
1 cup peach preserves
½ cup heavy cream
1/3 cup brown sugar
1 tsp. cinnamon
1 tsp. vanilla
2 peaches diced
Ingredients for the Crust and Crumb Top
2 ½ gf flour
1 ½ tsp baking powder
¼ tsp salt
2/3 cup sugar
1 cup cold diced butter
2 eggs
2 tbsp. cold water
1 tsp. vanilla extract
Ingredients for the Glaze:
¾ cup confectioner’s sugar
2-4 tbsp. milk or heavy cream
