KC’s Summer Watermelon Salad Recipe
Ingredients:
3 1/2 pounds seedless watermelon, cut into 1 inch cubes
2-3 tablespoons fresh lime juice
2 shallots, thinly sliced
1/2 cup fresh basil leaves, cut into thin strips
4oz Feta cheese, broken into large pieces
Kosher salt & ground pepper
Directions:
Combine sliced shallots & lime juice in a small bowl for a few minutes.
Then, in a large bowl, toss the watermelon, basil, Feta & shallot mixture, and sprinkle lightly with salt & pepper. Serve & enjoy!
